One of my very favorite cakes my mom makes is this strawberry cake. It’s seriously delicious and taste like something you would get from a bakery. I LOVE strawberries and I LOVE cake…so OF COURSE I would love strawberry cake.
Strawberry Cake
CAKE
1 box white cake mix
1 3 oz. box of strawberry jello
1 C finely chopped strawberries (frozen is fine)
1/2 C vegetable oil
1/2 C water
4 eggs
ICING
1 stick of butter, room temp
1 8 oz. package of cream cheese, room temp
1/2 C finely chopped strawberries
6 C powdered sugar
2 Tbsp of heavy cream
DIRECTIONS

Pre-heat oven to 325

Grease and dust with flour 3 round cake pans

Combine all ingredients for the cake in a stand mixer and mix on medium-high until cake is fluffy (about 4 min)

Pour batter equally in the three pans and bake for 30 min or until a toothpick comes out clean.

Cool cake on a wire rack for about 1 hour and then carefully remove from pans and continue to fully cool on a wire rack.

If you have the time, wrap the cake in foil and freeze. This step only helps in the icing process so don’t worry if you don’t have time to do this.

For the icing, using the wire whisk attachment on a stand mixture, mix the butter and cream cheese until combined and fluffy.

Add the strawberries and combine

Sift the powdered sugar and add in 1 cup at a time.

Add the heavy cream and mix until incorporated.

Put a generous dollop of icing on the top of the first later and repeat until all three layer are stacked.

Put a thin layer of icing on the outside of the cake and then place in the fridge for 15 min to firm up.

Remove from fridge and finish icing until cake is fully covered.
