A New Favorite Weeknight Meal

This has become a regular addition to my weeknight dinner rotation and I feel like I enjoy it more and more each time I make it. The brown sugar and whole grain mustard combo on the pork along with the apples is such a great pair and the roasted brussels sprouts are always a favorite. I love to pour some of the apple sauce mixture on top of the pork and rice for extra flavor, too! Cooking pork can be tricky to ensure you get it to the proper internal temperature without drying it out so I suggest getting a meat thermometer.

Stove Top Cinnamon Apples via: Life Made Simple

Roasted Brussels Sprouts with Bacon- Cut off the ends of about 15-20 sprouts and slice into quarters. Toss in olive oil, salt, pepper and garlic powder. Cut up one piece of bacon into small pieces and mix into the brussels sprouts. Roast for 20 min at 400 degrees, occasionally taking it out to toss to ensure they aren’t sticking to the pan. Sprinkle with parmesan cheese upon completion of roasting and serve immediately.
