Our Favorite Homemade Pancakes

I shared this recipe on my story last week but wanted to post it here as well. These are our favorite pancakes and I prefer them topped with berries and fresh whipped cream. They rise sky high and I’ve recently made a few small changes to the original recipe that I’ll be sure to notate below. Best Ever Homemade Pancakes

Ingredients

•1 1/2 cups all-purpose flour
•3 1/2 teaspoons baking powder (i only use 2 1/2 tsp)
•1/2 teaspoon salt
•1/4 cup sugar
•1 1/4 cups whole milk
•1 egg
•3 tablespoons unsalted butter melted (I use 4 Tbsp)
•1 tsp vanilla extract ⠀

Directions

•Melt the butter in microwave and set aside to cool.
•Combine flour, sugar, salt, and baking powder.
•Stir milk and egg together.
•Create a well in the center of the flour mixture and pour the butter, vanilla, and milk mixture into the well.
•Whisk everything together until just combined. It will be a nice thick batter. ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀
•Allow the batter to rest a few minutes while your skillet is heating to medium high heat and melt some butter to grease the pan.
• scoop the batter onto the skillet with a 1/4 cup for each pancake.
•Cook each side for 3-6 minutes, until lightly golden brown.
• Top with freshly whipped cream (1 C heavy cream, 1 tsp vanilla and 1 Tbsp of powdered sugar beat on high with an electric mixture using the wisk attachment) and sliced strawberries and blueberries. You can also just do butter and syrup, if you prefer.
•This recipe makes about 8 pancakes
