Pot Roast. Not known for its photogenic skills but it makes for a yummy, hearty meal with good leftovers.
A friend of mine made this meal for me after I had Quint (side note: the best thing you can do for a new mom is being her food!) and it is so delicious and insanely easy. Here is the recipe for an easy Crock-Pot Pot Roast: ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀
1 package stew meat
5 stalks of celery, chopped
3/4 package of baby carrots
3/4 bag of petite potatoes, halved (i like the tri blend of purple, red and yellow)
1 medium size onion, chopped
3-4 cloves of garlic (i like the frozen minced cloves from Trader Joe’s for easy, no chopping)
1 package of McCormicks Pot Roast seasoning
1 C of water⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀
Cook on low for 8-10 hrs. Serve over rice (I love the frozen organic brown rice you can microwave from Trader Joe’s. Easy clean up and it tastes great)⠀⠀⠀⠀⠀
Note: you can use the entire bag of carrots, potatoes and celery but I find I can’t close the lid if I use it all. If you have a larger crock-pot, feel free to use the whole bag)
